the highlander pepper has been a great performer and the taste/heat is perfect for us.. told the dw that we need to fry them in lard this time. as well we need to make some pico de gallo to go on top of them.

two weekends in a row rellenos, steak tacos ,beans and rice....

after 2 plate fulls, all i can say is time for a nap.....

what to do with the leftovers?....... i know make an asada relleno omelet for breakfast ......

warmed up a couple rellenos ,asada meat, rice and beans. once flipping the omelet over ,added everything with a little extra cheese
rolled it up and topped with some pico de gallo...

Not only will I put a fairly wide choice of veggies in an omelet but nearly any leftovers.

My cooking very much revolves around simple themes ... if they amount to something that can be called a theme. Maybe. It's that the leftovers go in and shouldn't be left out .
