Gorgeous zucchini! In addition to zucchini bread, here is a recipe for zucchini cobbler! It is awesome!

It is best to use the really big zuchinni, ya' know-the baseball bat sized ones. The crust mix made too much, so I put the extra in a zip loc bag and froze it for the next one. I also tweaked the recipe a little bit. I added twice the amount of cinnamon, 1/4 teaspoon of ginger and a dash of cloves. It made it even more yummy! Ya'll enjoy!
Zuchinni Cobbler
FILLING
8 cups Zuc. peeled and seeded use large
2/3 cup lemon juice
1 cup sugar
1/4 tsp nutmeg
1 tsp cinnamon
Mix and cook until tender and set aside to cool
CRUST
4 cups flour
1 1/2 cups sugar
1/2 tsp salt
1 1/2 cup butter or oleo
cinnamon sugar to sprinkle on top
Mix crust till crumbly and pat 1/2 of crust into an oblong baking dish.
Bake that crust for 10 minutes at 375*
Place filling on baked crust and then put other 1/2 of crust mix over filling.
Sprinkle the cinnamon/sugar over top.
Bake at 375* for 30 minutes.
Don't tell them it is zuchinni and they will think it is apple....

Greetings and Happy Easter to all our family and friends from all of us at the Crazy H-Bar Ranch;

Today I prepped the last garden box. Because my baby sister delivered a flat of special seedlings for the garden. Included in there is; Indigo Blue tomatoes, Dads Sunset, Spicy Fish peppers?? And a bunch more that I can't remember right now...



Here are the zucchini plants we planted 3 weeks ago, and yes... those 2 zucchinis are over a foot long.



At the other side of the ranch it appears that the chickens are in the Easter spirit OR the Easter bunny really does eggsist. We currently have 11 laying hens and yesterday we collected 9 eggs, as usual. This morning we collected 15 eggs. So, if I do the chicken math right; 11 from 15 leaves 4 and 4 plus 9 is 13 and 13 minus 11 that leaves 2 uneggsplained eggs... So, it appears someone did OT last night... Or maybe it WAS the Easter Bunny!



HO HO HO! LET'S GO PLACES!!!


Ok, now I know something is up...found 2 more eggs this afternoon for a total of 17 eggs from 11 layers. If I didn't know better I would think the wife was messing with me... but all the eggs were accounted for...

Any neighbors who find your chickens amusing? It does sound like someone is yanking your chain. How do you know it isn't your wife?

No... Everything is locked and secured. Frankly, my wife would never think of that. I would've though. I checked the egg counts all the time before collecting so I know all were accounted for. That egg count is amazing though...

It's amazing how the different colors keep coming. We have about 6 dozen in the frig if anyone needs some.

Just took a walk through the garden... wow have things changed. The plants that are in, are growing nicely. The zucchini bread plants have came a long way from seedlings to having buds on them already.

The Sugar pumpkins and yellow squash look awesome.

The herbs and tomatoes are almost ready to go into the garden, just a few more days.

Finally, after 2 years of no buds our Ruby Red has a couple of nice clusters that were hiding, I can't wait...

The apple blossoms look great, I hope we get some apples this year.

"Millions of Peaches, Peaches for me" lol.

And, can someone explain to me how a palm tree, obviously separated from its stump can still be growing?


Anyhoo, although things at the ranch can get a little stressful and rough (God will help us through it). But the garden and the chickens keep us going and add a little break from life's challenges. Just as Gastrointestinal tests always do, this too shall pass.

Orange Paruche.

Pineapple.

Amish.

And the new Peppers;
Wonder Bell.

Golden Marconi.

Melrose sweet.

Yellow and Orange Habaneros.

And a very strange Fish Pepper.

I NEED A BIGGER GARDEN...

Some interesting things you've got growing there, Hosspak! I've grown a four of those tomato varieties, Pineapple, Hillbilly, Amish Paste and Brandywine.

The Blue Indigo are very unusual in color and form from any I've seen. The Orange Paruche almost look like they're glowing! They look very tasty. I have something similar in appearance to them called a Golden Egg, but they are light yellow. That Fish Pepper is something else too. I can't wait to hear how they all do for you and especially how they all taste.
