I am SWIMMING in Okra--any recipes?

OMGosh, I wish some of my other crops were so prolific!! Every day I go out and have to harvest Okra!!

The only recipe I've done with okra is do coat with corn meal and fry in bacon grease. (We like it with turkey and chicken.)

I am NOT gonna have enough room in my freezer for the okra AND green beans AND the corn I bought at the farm's farm stand yesterday!! :lol:

So, give me your okra recipes, please, and I'll start eating it NOW.

Okra is easily pressure canned and they can also be pickled. Don't try to water bath can. They are alkaline.

Search pickling okra and you'll come up with dozens of them. Generally speaking there are two methods; with dill or with hot peppers. There are also semi sweet recipes using cloves and mixed pickling spices.

That's RIGHT!! We okra eaters need to stick together!!
This recipe sounds pretty good. I tried baking some in olive oil and salt and pepper last night, but I didn't like it. I think it's a little bit like tofu, and needs some flavoring to bring out the mild taste.

Wifezilla, I'll eat all of the okra that you leave on the table!! :lol:
