You can strip off the sealer, which I would recommend before going to the effort of staining.
There are a number of grout stain manufacturers. You may get a good recommendation from a tile place that also does installations and remodels.

Re: Hearth~I had this stove sitting up on the hill for years, I installed it a couple years back, here on the high desert.

I cut the rug away, laid 2"X 4"s~attached them to the floor with metal~topped them with 5/8" plywood with concrete board on top of that~spread mud (grout) and pushed in Slate.
You might be able to see the holes in the two side pictures, they allow air to flow under and up behind the stand off on the other side. Kinda simple.
When you install the chimney, you'll want the top two feet higher than the nearest point 5' away~you will have good draw.

In the first picture you'll see: I cut conduit about 2" long holding the concrete away from the wall with 3/8'' lag bolts running down the conduit securing it to the wall.
