I've been letting these spread for many years, they have overwhelmed everything else & seem to be the apex vegetation in their locations.

Pretty!
The deer don't eat them? I see the arborvitae in the background has been deer pruned.
Not often. The deer occasionally nip off the buds or blossoms, but thankfully don't seem to be especially attracted to them. Not surprising really, since there are so many better food sources available at the same time (like the apples falling from the trees in my back yard). Those beds used to have large patches of violets, which the deer and/or rabbits found more to their liking. As you've noticed, though, they deer will chew on the arborvitae in the winter, when food is scarce.
