stuffed leaves (I just made meatballs out of the leftover filling) and piled the filled leaves and meatballs on top of a layer of canned Italian tomatoes and a cup of diced rhubarb
put another layer of tomatoes and rhubarb on top fo the stuffed leaves and then cover with fig leaves (or more vine leaves..my first "harvest" was/is always skimpy but now I have tons of leaves!!!)
cover and put in the oven
there you go stuffed vine leaves in a wonderful fragrant ..suck your thumb twirl your hair ...comforting sweet tart sauce ...with many things from your garden
I have a tasty thing I do with vine leaves ( but you don't actually eat the leaves). I usually make it when the leaves are large becase it makes it easier.
You take a casserole dish & lightly oil it : then line it completely with vine leaves overlapping them thoroughly. Fill the centre with mushrooms, either the ordinary common button ones or a mixture of wild ones. Add a little grated garlic, fresh thyme, chives, sea-salt & black pepper. Drizzle over a little olive oil & cover with more vine leaves, followed by the casserole lid. Cook in a moderately hot oven until mushrooms are cooked. It is very simple but so delicious -- the vine leaves impart something extra to the mushrooms which seems to bring out the essence of them. I have sometimes whizzed them up and used them over pasta or in a risotto.
My two vines are in leaf now so it won't be long till I get to taste it again ---Mmmmm...... row

I always put just under half cup good flavorful olive oil in the bottom of the Dutch oven first ..then (and I forgot and that was what I kept thinking was missing) this last batch to put the other half cup on top of the top leaves..the olive oil does matter and sometimes I will add the juice of a lemon ..if you are luck enough to have sumac use that instead of rhubarb in the sauce actually anything tart you like I have even used sorral
the stuffed vine leaves are a very nutritious and wholesome dish I think

I have bamboo shoots coming up all over one of my tiers (I grow it to make my very "rustic" trellis and bean polls ..so what better way to use them up and control this beast ...but to eat them
I have not done this yet because I am always overwhelmed this time of year with stuff ...oh well I am going to try them today!
