Had a #25 bag of tomatoes in freezer. Canned 9 quarts of tomatoes. Glad to have the freezer space

I understand exactly what you mean. I don't know how many pounds it was but I cooked a bunch of tomatoes down and canned 18 pints today. It's somewhere between puree and sauce consistency. I do pints instead of quarts. There are only two of us so pints work out better.

I've just set down at the computer after getting back from preparing the area to process chickens tomorrow to go in that freezer space. I'll process one old hen that's molting, two 30 week old pullets, and four 20 week old pullets to help fill that space. I recently put eleven 18 week old roosters in the freezer and I'm cooking one of them tonight in the crock pot for supper tomorrow night. That will take care of the chicken processing until January when those last 11 chicks get big enough. Then I'll fire up the incubator for the next round.

And in early February I'll start the seeds for next year's tomatoes.

I dug my carrots over the weekend. The filled a large wheelbarrow with the tops still on and were a slight struggle to move. I cut off the greens for the horses along with any imperfect carrots. I layered them with hay in a trash barrel and put them in my cool cellar. They will last all winter or until we eat them all. My back was killing me for a few days. It took a long time but was relatively easy work. Bending over a thousand times was just to much I guess.

Tonight I'm making up a batch of monkey butter which will be going into my bosses' gift baskets for Christmas. First time doing this recipe so if I like it might make another batch to give to my co-workers too!

I have canned or preserved NOTHING today! :lol: Instead we ate pizza made with Italian sausage that I made, dried blackeyed peas with dehydrated okra and onions, sweet potato cassarole and grapefruit salad. I am more in the take it out of the freezer, dehydrated veggie bucket, glass jar and EAT IT !!!!!!!

I just processed 12 quarts and 20 pints of sauerkraut I made in the crock. 50 pounds of raw cabbage went in the crock around the end of September. This was my 4th year making it and it is fabulous as always! I could just eat a bowl full....

Today I've made Honeysuckle and Red Rose Petal Jelly.... in the last 2 weeks I've canned dozens of jars of several variations of Strawberry Jam!

It gets hot outside, and I have the house all steamed up from canning. It seems so wrong... but its just so right! :rainbow-sun

This morning I picked 600 dandelion flowers and de-petaled them. Then I made seven 1/2 pint jars of jelly and 2 pints of syrup (for pancakes). Then I picked 3 baseball bat zuchinni. I peeled, cored and chunked 2 of them up. I cooked them for zuchinni cobbler and canned 3 quarts. I will make cobbler with the other one tomorrow night.
