The problem is that I am the only one in the family that likes eggplant. I have 3 more almost ready to pick and a bunch of new ones coming on.

I think I'm going to see if the neighbors want some.

Thre are tons of recipes for using eggplant - Parma style is just the tip of the iceberg. Try a nice tapenade or grilled eggplant, or maybe roasted as bruschetta.

Oh yes I like it prepared more than one way. On the grill is excellent if done right and I know there are many other ways to use it.

What I mean is that since I am the only one in the family that likes it, and it looks like my plants are going to be fairly prolific, I don't think I can eat it all.

Thanks for your help guys. There is only my hubby and myself and I'm not too sure if he even likes it that much.

Dennis how many plants do you think will be good for just one person? Or Dave any ideas?

I think Dave said that each plant maybe produces 4-5 the they are done with. But that is probably due to the length of season. So I guess the number of plants would depend on how much you like eggplant and your season.

But I am no expert. I have made two attempts at germination and failed. I did grow some transplants from the nursery one year but that was in Montana and I got two bell pepper size black beauties that were terribly bitter.

Okay I think I will just start out with a couple seeds and see if anything grows from them. I will only need one plant then. I'm worried it will turn mushy if I freeze it.

OMG these flowers are killing me!!!!

how long do they sit before the fruit forms I am going crazy waiting to see something!

I did touch all the flowers to each other to make sure they polinated...it was kind of romantic! :love

funny some things have a flower for a second and others for what seems like ever!!!

these are brilliant and beautiful ..still very vibrant flowers! I am totally enjoying them but it seems like at least a week and a half now

can you tell me how long before these things make babies??


I have to say I would grow this plant just for the beauty of it now ..but I know there are fantastic fruits lurking and I want them and the entire experiance of growing my own eggplant! greedy me!!!

I have San Marzano tomatoes .. great Italian dark leaf parsley.Rosemary bushes, thyme all over, plenty of oregano..garlic doing well.... fantastic basil that is cranking it out this year...my fig tree is bursting ..fresh eggs...I have grapes to make Italian basement wine ...I am making duck proscuitto and now eggplants :)

I feel like I am having an extended and very romantic vacation in Italy all in my own backyard!

I am going to have to buy all my cheese however

Now you have me fascinated! What is duck proscuitto (& how do you make it)???? I live in an area which is famous for it's ducks. In times long past Aylesbury & the area around used to supply all the London markets with ducks which were walked all the way to the capital. It must have been quite a sight. :D

Your backyard romantic Italian idyll sounds delightful (& delicious). Have a great weekend. I hope you get your aubergines soon. :fl I am waiting for mine to flower -- it's the first time I have grown them so it's a great adventure for me.
