I bought an eggplant berry* at the store the other day, a large purple generic. I wanted to see if I still liked it.

I cooked it simply, sauteed hot in olive oil, with garlic and onion, then dressed with a dash of salt, pepper and lime juice.

It was quite good. In fact, now I recall I really LIKE eggplant.
I hope I can get a few to grow before this this season ends.

* I recently learned that the fruit of the eggplant is actually a berry.
I also recalled that you should salt them before use.

they are great big beautiful berries and there are little tiny white berries and long skinny berried..there are just so many eggpants in this world ..I still have no sign of one and my plants are looking ok the flowers are still sitting there

I salt eggplant not so much because people say it helps remove the bitterness (I do not find eggplant bitter) but I do salt it to get he water out ..firm up the flesh a little so it absorbs less oil ..and it also cooks better in most dishes when you get some of the water out

one if my favorite dishes is a Persian KuKu ..you saute your eggplant in lots of olive oil unti soft and cooked add some freah garlic towards the end of cooking then take a half dozen beaten eggs pour over the cooked eggplant cook like a frittata or Spanish tortilla

slice and serve with feta cheese and fresh chopped herbs like basil, mint, parsley ..some olives...

So are you going to share photos?!

Mine are finally flowering.... maybe I will manage one or 2 fruit. :/

I owe a couple of people here some photos. Tomorrow I have to do some chicken coop remodeling. Maybe the next day. The real reason I have not taken photos of the eggplants is that I dont want yall to see the weeds. I think next season I am going to try mulch.

Ok so I have some Rossa Bianca Eggplant from the farmers market. I will try this

but I don't have fresh herbs will olive salad work (like froma Muffaleta)?

I have just come across a delicious sounding eggplant recipe -- fried eggplant rolls with mozzerella cheese, tomato & basil.

My plants are growing well but no sign of flowers yet. As I have a deep yearning to try this recipe I may just have to BUY them.......!!! :barnie. After all a gal's got to practice to get it right.

How are all your plants coming along -- I bet you all have a glut of them down there in the south. If so I'm JEALOUS!! ;)

I tried Rosa Bianca last year, it was a good variety not bitter at all, and it had a nice tender flavor.
You'll enjoy this variety!! ;)
