Kombucha anyone?

What about the alcohol content? It's negligible, right?
I have yet to actually TRY any and I was just told that I need to go to Walmart this afternoon to get the gift cards for the folks in the safety program. I thought that as long as I was there - I may as well pick up a few bottles. However... I would hate to risk getting caught with it on my desk if it was something I might get in trouble over.

@Kassaundra - where in Walmart did you find it?

There was one bottle in the entire store. ONE! It was ginger flavored. o_O Not a fave, but for a first taste - not too bad.

And ..... got my jar and scoby yesterday!!! :weee

Here we go.

I read somewhere that the alcohol content is about a half of a percent. I am so unaccustomed to drinking alcohol that the kombucha gives me a tiny buzz.

It is KILLING me to not mess with the 'booch' jar! But the instructions were very clear.. DO NOT DISTURB it for at least 7 days...

Also - just my observations - and possibly as much in my head as not.... But, I bought that bottle of kombucha on Monday - and per advise - only had a little bit at first. Like 4oz. after lunch. Then a little more just before leaving work at 4:30. Monday night - for the first time in WEEKS I had no heartburn and I slept like a rock. Did not move all night. Tuesday, I woke up much more alert than usual (probably because I actually SLEPT). When I got to work I sipped at it over the morning and I found that I felt a bit more alert. And - never got to that 2:00 slump of zero energy.
Was it the kombucha?? Was it a good night's sleep?? A bit of both????
I can say though, no kombucha since Tues afternoon and I'm DYING from heartburn right now....

That was my exact experience drastically reduced heart burn w/ the tea, back to normal w/I a day w/o the tea.

Greetings, I don't do a second fermentation, but drink it after it develops in the one gallon jars. It is completely vinegar, for the most part. Some time I forget it for several days, other times I drink it in large amounts. I have it on my salad, mixed into mashed potatoes, on fish, I had it mixed into my porridge this morning, you may feed it fruit. when you eat straw berries, grapes, peaches whatever,, some are not perfect, wash them in White Vinegar, crush them and put them into the batch you're making, they don't have to be added when the batch is started, add them any time.
The Bacteria is: Acetic Acid Bacteria. CH3COOH is being produced, Ethanol is produced by the yeast and is consumed to form acetic acid.

The drinking of live culture is the benefit.

Acetic Acid is a weapon of mass destruction used by Acetic Bacteria to kill other bacteria and fungus.

Vinegar is used in cleaning. When making cheese, I have a spray bottle with White Vinegar, I spray my hands, the counters the knife the colander, anything that will touch the Curd or fresh cheese.
