@Beekissed do you use clear gel or flour in you hot pepper butter. It sounds like something I should make.

The recipe calls for cornstarch and it comes out like a sandwich spread....lovely and incredibly tasty, can't eat a sandwich without it now. The recipe is so old that it calls for a "one peck of hot peppers". :D

DB got it at a health food store. He said it has to be organic and dried and not smoked. DB is something else. He has just worked and never really had plans to do things like buy a house. Then the other day he said he has taken care of other people his whole life and it is time to take care of himself. I agreed with him. THEN, he said he was fixing up his trailer he has lived in for 30 years and then going to sell it. o_O :epThis is earth shattering news for anybody who knows DB. He is going to sell it and buy a house. I have been trying to get him to do that for 10 years. THEN, he tells me when he gets off work (which he does 10 hours STANDING) now he is going for a hike in the hills and I think it is 2.5 miles around. He is 60 years old! LOL So DS and I have been drinking it a few days and I told DS, we better be careful you might end up like your uncle and end up at ACE looking at paint. Maybe your brother is watching what your family is going through and realizing time is short in this world, so if you always planned to do something, better get off your duff and just DO it. :D

Did I miss the recipe? In modern English measurements?

I don't have those...I just guestimate what a peck means and it always turns out great. :D This is exactly how it reads on this yellowed old index card.....

1 peck of hot peppers
1 qt. of yellow mustard
3 lbs of brown sugar(we don't use that much...more like 2 lbs)
1 qt vinegar (apple cider, I assume and that's what we use)
3 T. salt

Grind peppers(we used to do this with an old table attached hand crank grinder back in our off grid days but nowadays I pulse them in the Ninja processor, which makes for a much smoother spread. Grinding them makes for a smooth but more relish consistency.)

Combine ingredients, boil 15 min.

Add 6 heaping T. of cornstarch and cold water in a separate bowl, put in peppers to thicken.

Makes 9 & 1/2 pts.

That's the whole recipe...fill in any gaps you see as you go along. Now, this can be canned like one would do jelly or jam, by just filling the jars with the hot mix or it can be canned in a boiling water bath for the appropriate times one would do any jam or jelly.

On the left hand side of this pic, applied liberally to some homemade bread, you'll see what mine looks like as a finished product....the color varies with the color of the peppers you may use. You can also use jalapenos for a totally different taste profile, but we've always preferred the hot wax peppers for this recipe.

If I did the math right 20-25 peppers is a peck-assuming banana types. 30-40 if small hots, although that would be HOT!!!!

Not a bit hard to make...and has a great flavor, so you can use it on many things besides sandwiches. Also makes a pretty jar if you let your peppers get red and orange.

That is the same brand I have, it does do a multitude of good things for you. I hope your garden does well for you. Good luck
